This is another recipe by Attila Hildmann. It's a spicy asian noodle salad with (almost all) raw veggies, which tastes amazing :) And it is actually easier than you would expect from the list of ingredients!
Ingredients:
200g soba noodles
130g red cabbage
1/2 avocado
50g peas
1 carrot
1 scallion
20g sesame seeds
1 tbsp olive oil
sea salt
for the dressing:
- 1 clove of garlic
- ginger (size of a fingertip)
- 1/2 red chili pepper
- 1 tbsp lime juice
- 3 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp rice syrup (I used maple syrup)
- 1 tbsp cashew butter
- 1/2 tsp curry
Instructions:
- Cut cabbage, avocado, carrot and scallion.
- For the dressing, chop garlic, ginger and chili pepper. Mix with lime juice, 1 tbsp water and all other ingredients for the dressing in a small bowl.
- Cook soba noodles according to instructions on the package. Cook peas in salted, boiling water for 3 minutes. Drain.
- Drizzle noodles with oil to prevent them from sticking together. Mix them with the dressing.
- Then carefully mix noodles with vegetables and sprinkle with sesame!
(And just as a tip: I would recommend eating it all the same day because it won't taste good the next day.)
