Spicy Asian Noodle Salad



This is another recipe by Attila Hildmann. It's a spicy asian noodle salad with (almost all) raw veggies, which tastes amazing :) And it is actually easier than you would expect from the list of ingredients!





Ingredients:

200g soba noodles
130g red cabbage
1/2 avocado
50g peas
1 carrot
1 scallion
20g sesame seeds
1 tbsp olive oil
sea salt

for the dressing:
  • 1 clove of garlic
  • ginger (size of a fingertip)
  • 1/2 red chili pepper
  • 1 tbsp lime juice
  • 3 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice syrup (I used maple syrup)
  • 1 tbsp cashew butter
  • 1/2 tsp curry

Instructions:
  1. Cut cabbage, avocado, carrot and scallion.
  2. For the dressing, chop garlic, ginger and chili pepper. Mix with lime juice, 1 tbsp water and all other ingredients for the dressing in a small bowl.
  3. Cook soba noodles according to instructions on the package. Cook peas in salted, boiling water for 3 minutes. Drain.
  4. Drizzle noodles with oil to prevent them from sticking together. Mix them with the dressing.
  5. Then carefully mix noodles with vegetables and sprinkle with sesame!
(And just as a tip: I would recommend eating it all the same day because it won't taste good the next day.)
