Simple Burritos


In my first few weeks as a vegan, these burritos constituted a major part of my diet. I mean, they are about as quick & easy as it gets when it comes to preparing a meal, and they are filled with beans and fresh veggies, which make them pretty delicious!


On top of that, you can store all the leftover veggies in the fridge and just throw them together in a tortilla whenever you need a snack. Definitely a quick-fix for hungry vegans :)

 



Ingredients
:
  • tortillas (whole wheat, or whichever kind you like best)
  • re-fried beans
  • avocado & lime
  • lettuce
  • tomatoes
  • sweet corn
  • cucumber (optional)
  • jalapeƱos (optional)



Instructions:
  1. Either cut the avocado, or mash it with a fork and mix it with the juice of 1/2 lime. Salt & pepper to taste.
  2. Cut tomatoes, cucumber & lettuce. Warm up the re-fried beans.
  3. Then place a tortilla in a pan, spread some re-fried beans in the middle of the tortilla and warm it on medium heat. Don't leave it in the pan for too long or it will get too crispy.
  4. Place tortilla on a plate and fill with veggies, roll and enjoy!
