Chinese Peanut Noodles


These noodles were on my menu pretty much once a week when I first went vegan because they are easy to make and pretty tasty. :) You can eat them with a fresh, green salad on the side, or add cooked/ roasted veggies. For instance, roasted green asparagus is delicious with it!



Ingredients:
  • 250g rice noodles
  • 2 tbsp peanut butter
  • 1.5 tbsp soy sauce
  • 1 tbsp tahini
  • 1 tbsp rice vinegar
  • 1.5 tbsp maple syrup
  • 1 clove garlic (minced)
  • 1/2 tsp fresh ginger (minced or grated)
  • 2 tbsp sesame (or olive) oil
Instructions:
  1. Cook the noodles until they are almost soft.
  2. Whisk together 1 tbsp oil, peanut butter, soy sauce, tahini, rice vinegar, maple syrup, garlic and ginger.
  3. In a skillet, fry the noodles in 2 tbsp oil for 3-5 minutes or until noodles are soft.
  4. Pour peanut sauce over noodles and fry for another minute. You can eat these warm or cold.
